Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 2 lobsters

Ingredients:
Meat from 1 cooked lobster
2 tbsp mayonnaise
1 tsp fresh lemon juice
Pinch of salt
Pinch of black pepper
1 tbsp butter (for warming the lobster)
2 top-split or brioche hot dog buns
1 tbsp melted butter (for brushing)
Instructions:
Carefully remove the lobster meat from the shell. Cut it into bite-sized pieces and remove any inedible parts, including the intestines if present.
Heat the butter in a skillet over medium-low heat. Add the lobster meat and gently warm it for 1–2 minutes to enhance its natural aroma and buttery flavour. Avoid overcooking.
Transfer the warm lobster to a bowl. Add the mayonnaise, lemon juice, salt, and black pepper. Stir until evenly coated.
Using the remaining butter left in the skillet, toast the buns until golden brown. Brush each bun with melted butter for extra richness.
Divide the lobster mixture evenly between the toasted buns. Serve immediately while warm.

How to Store:
In the Fridge: Store the lobster filling in an airtight container for up to 2 days. Store toasted buns separately to prevent them from becoming soggy.

Reheating: Lobster rolls are best enjoyed fresh. If needed, gently warm only the lobster meat in a skillet over low heat before assembling with freshly toasted buns.
